Grown at 4,300 ft above sea level at 13.3763° N, 75.7248° E, in the misty highlands of Bababudangiri, this SLN 795 beans from Kalledevarapura Estate, Chikmagalur, is a limited lot that underwent an extended 720 hour co-fermentation, created for those who believe some things are worth the wait. Complex, expressive and deeply layered, this is Indian specialty coffee beyond the expected.
At Bili Hu, much of our experimentation begins at the post-harvest stage, exploring how considered fermentation and processing can unravel unexpected character in a coffee. Herein, as arabica grows beneath a biodiverse canopy that includes wild fig trees with wild figs naturally falling and fermenting on the forest floor, this coffee was co-fermented with what we like to think of as one of nature’s forgotten gifts, creating a layered cup of fermented fruit, brown sugar and rum-raisin depth.
Roasted to a medium to profile, this coffee opens boozy and heady with notes of rum and raisins, brown sugar, dried berries and a quiet wild fermented-fruit character running through the finish.
