St. Margaret Estate is spread across 55 acres in the region of Magundi, Chikmagalur. The elevation of the estate is 750 MASL. It is a Robusta growing estate with the Bhadra River flowing right behind the estate providing a great irrigation system.
About The Post-Harvest Process :
Most ripened Robusta cherries were selectively picked and sorted for any kind of defects. The cherries were then transferred to a barrel and inoculated intenso yeast was added and sealed. In the fermentation of 24 hours with this particular yeast, the sugars break down and are allowed to produce fruity and sweet complex notes due to the formation of acids and different enzymes. This allowed us to achieve a relatively complex and fruiter cup of some beautiful Robusta cherries.
